Bands, Baking, and a Bash (Weekend Part 1)

Wow! Things have gotten crazy! I don’t know where the time has been going, but my to-do list is ever-growing. 

Let me catch you up a bit:

Mat Kearney was amazing on Monday night.

He offered not only a great performance, but was witty, collected, and he ran around the Knickerbocker and met all his fans! I even got a hug. I know, lucky.

Along with my two roommates (I’m in a triple), we have a solid group of five girls that are known infamously as “the fab five.” We do most things together. Here’s a photo of us at the concert in our third row seats.

This weekend, we stayed VERY busy. 

 

Friday night, because it was getting cold outside and fall seemed to have finally arrived, I decided to make an apple crisp. DELICIOUS! Because I’m in a dorm and lacked conventional baking ingredients, I ended up buying a cinnamon streusel muffin mix and changing the recipe a little. We are trying to avoid the “Freshman 15” (which believe me, it’s real.) so I used easy substitutes like low-fat yogurt instead of all the butter. Our dorm has lots of pots and pans you can check out, so accumulating baking utensils is never a problem. After slicing, peeling, adding, and mixing, here was the end result:

 

Well, I have a bit more studying to fit in before dinner. But I’ll post soon about the most HECTIC part of this weekend, Pull! But don’t worry, I trust you already know that Odd Year represented and came through with a solid win. 🙂 We also have the Critical Issues Symposium this Tuesday and Wednesday, a day off of school to attend seminars and presentations about Islam. Oh, and did I mention Fall Break? It starts on Friday! Woohoo!
